Olive Oil

 

Olive oil is extracted from the fruit of the evergreen Oleaceae tree using different processes, some cold pressed and some using heat. Extra virgin olive oil is the best variety and ideal for salad dressings and for flavouring food. Olive oil varies from green to yellow in color depending on the olives used in its production. It also has variations in its taste according to the region and country it originates from and on the degree of refinement involved in its overall production 

Whilst the Mediterranean countries including Spain, Italy and Greece dominate in the production and consumption of olive oil, other countries including Australia, America and Canada are showing an increase in its consumption every year.

  • Olive oil does not require refrigeration, if stored in a cool place away from sunlight and heat; it can keep for up to two years.
  • Olives have very low calorific content. A fully ripe olive is found to have only 9 calories.

Benefits of Olive Oil

  • Olive oil is high in healthy monounsaturated fats. This means it helps to reduce the 'bad' cholesterol in the body and lowers the risk of a heart attack.
  • Olive oil contains polyphenols which are natural anti-oxidants. They help the body fight illnesses.
  • The most expensive form of olive oil is extra virgin olive oil. It is considered the best as it is obtained from the first pressing of the olives. It is least acidic and has the fruitiest flavour.
  • Olive oil has moisturizing qualities. It can alleviate dry skin conditions like eczema and reduce the appearance of stretch marks.
  • Regular use of olive oil moisturises the scalp and clears dandruff.
