How to make homemade peanut butter cookies

 

Simple steps to creating a great peanut butter treat

Traditional peanut butter cookies are most famous for their criss cross fork pattern which is imprinted in the cookie before it is baked, but the flavorful goodness of peanut butter is an unmistakeable taste of this cookie. According to the History of Cookies, the first known recipe for peanut butter cookies came in 1933 in a Pillsbury cookbook in which Mary Ellen Ames instructed readers to make "Peanut Butter Balls" by pressing the dough down with the tines of a fork.  And thus, the traditional peanut butter cookie began. These are steps in how to make peanut butter cookies.

Instructions
Step 1
Measure and mix the first four ingredients

Measure into a large mixing bowl:

  • One and 3/4 cup up brown sugar
  • 3/4 cup shortening
  • 2 tablespoons milk
  • 1 tablespoon vanilla extract

Combine with a nixer at medium speed until light and fluffy.

Step 2
Add peanut butter and egg

To the dough ingredients add:

  • 3/4 cup creamy peanut butter

Mix on low until well combined.

Then add:

  • 1 large egg.

Beat again until blended.

 

Step 3
Form the cookies into balls

Roll balls of about 2 tablespoons of the cookie dough into balls or use a small cookie scoop to form the dough balls. Place on a cookie sheet that has been greased or sprayed with cooking spray. Place the cookies about 3 across on the sheet to allow for room to spread while baking.

 

Step 4
Create the criss cross pattern in the cookie

Place 2 tablespoons of granulated sugar in a small bowl. Select a fork to make the criss cross pattern. Dip the fork into the peanut butter cookie dough in the bowl. Remove all dough from the fork, but allow the fork to retain a little stickiness from the dough.  Then place the fork tines in the small bowl of sugar to coat the tines, but shake off any excess.

Then use the tines of the fork to press an imprint of the fork into the cookie dough ball. It make take 2-3 presses to create the impression in the entire cookie dough ball. Make sure to re-apply the sugar to the tines of the fork every impression. Then to create the criss cross pattern, press the cookie ball with the tines of the fork from the opposite direction.

Step 5
Bake the cookies

Bake the cookies in a pre-heated 375 degree oven. Bake one baking sheet at a time for 7-8 minutes. Cool two minutes on the baking sheet before removing. Remove the cookies with a spatula to a cooling rack to cool completely.

Betty's best-ever peanut butter cookies recipe

In this video, Betty demonstrates how to make her all-time favorite peanut butter cookies. Out of hundreds of recipes tested and adapted, this one is Number One! Ingredients: 1 cup creamy (smooth) peanut butter 1/2 stick butter 1/2 stick margarine 1/2 cup white sugar 1/2 cup brown sugar, firmly packed 1/2 teaspoon vanilla extract 1 egg 1 1/2 cups self-rising flour Cream 1 cup peanut butter, 1/2 stick butter, 1/2 stick margarine, 1/2 cup white sugar, and 1/2 cup brown sugar until smooth. Add 1/2 teaspoon vanilla extract and 1 egg. Beat well, until all ingredients are well-combined. Stir in 1 1/2 cups self-rising flour, until mixture turns into a ball shape. Cover with plastic wrap and refrigerate for 4 hours or overnight. When ready to make cookies, roll small pieces into 1-inch balls and place them about 2 inches apart on a baking sheet. Use a fork to flatten each ball with a criss-cross pattern. Bake in an oven that has been preheated to 375 degrees for 10 minutes. Remove from the oven when done, and immediately place on a cooling rack or flat platter to maintain their shape while cooling. When cool place in a zip-lock plastic bag or sealed container for storage. These are the yummiest of cookies, and a great comfort food!
