How to make bread pudding

 

Bread pudding is an easy-to-make comfort food.  Serve it warm in the winter or cold in the summer.  Serve it plain or top it with drizzles of cream or coconut milk.  Make it extra-special with a heaping helping of whipped topping.

 

Serve bread pudding for dessert, tuck it in a lunch pail or even serve it warm from the oven for breakfast.

Instructions
Step 1

Whisk eggs and sugar together in large bowl.  Add milk, vanilla and almond (optional) and blend thoroughly.

Use any milk -- skim, 1%, 2%, whole, soy or coconut.

 

Step 2

Cut up the bread: small cubes or large pieces, whichever is preferred.

Bread such as Baguette or Batard that is a day or two old (and hard) works best since its soaks up the liquid without becoming soft and soggy.

 

Step 3

Stir bread, raisins and nuts (optional) into liquid ingredients and leave to soak 15-20 minutes, stirring once or twice during that time.  Spread butter on bottom and sides of baking pan.


Step 4

Spoon mixture into baking pan.  Sprinkle top with mixture of 1 tablespoon white or brown sugar and the cinnamon.  Bake in a preheated 350-degree Fahrenheit oven 25-35 minutes, or until golden and slightly browned.  Serve warm or cold.

Things Needed
2 eggs
1/2 cup granulated sugar
1-1/2 cups milk
1/2 teaspoon pure vanilla extract
1/4 teaspoon almond extract (optional)
6 slices bread
1/2 cup raisins
1/4 cup chopped nuts (optional)
1 teaspoon butter
1 tablespoon granulated sugar or brown sugar
1/2 teaspoon powdered cinnamon
Large bowl
Whisk
8x8-inch baking pan
Tips & Warnings   
Raw cranberries or apple slices may be substituted for raisins.
