How to make a rice crust for a quiche

 

Leftover rice? Perfect for a quiche when you want something other than a pastry crust.

A quiche is a complete meal in one dish.  A pastry crust, eggs, milk, cheese, and meat and/or vegetables are the ingredients in a typical quiche.

For a change of pace, the crust can be fashioned out of cooked rice.  Individuals on a wheat-free diet can enjoy a quiche when the crust is made with rice.

Serve it on its own for breakfast, lunch or dinner, or add a side salad.  Quiche is fashionable at the most elegant dinner, or it can be eaten with the fingers on a picnic.  

Instructions
Step 1

Remove leftover rice from the refrigerator while preheating the oven to 375-degrees Fahrenheit and preparing the filling ingredients.

Step 2

Oil the pie pan with a light coating of bottled olive oil or spray.

Step 3

Pat cooked, seasoned rice in the pan, evenly covering the bottom and the sides, at least 1/4-inch thick.  If using freshly cooked rice, cool it thoroughly and season it before adding it to the pie pan.  Either way, add olive oil, if needed to help the rice stick together.  An egg can be added, too, but is not mandatory.

Step 4

Add the quiche filling to the crust.  Cheese should be added first to cover the bottom of the crust and help prevent the cream/egg mixture from leaking through the bottom. Cover the cheese with optional ingredients such as meats or vegetables.  Gently pour on a mixture of 4-5 eggs and 1 cup of cream (light or heavy) or half'n'half, seasoned with salt, pepper and garlic powder to taste.

Step 5

Set the pan on a baking sheet and place it in the oven. Bake for 30-35 minutes, or until center is set and edges of rice crust are lightly browned.
